If you're anything like me, baking will be a top lockdown activity. Miss 2 loves to help (mostly help make a mess and lick the bowl!), and to eat the baking.
I love lemon, and have a lemon tree that always delivers, so this first recipe is my absolute go-to, never fail, sure to please Lemon and Sour Cream Cake.
I got this recipe from a flatmate at university, and have been making it ever since. It's super easy and my favourite way to eat it is with natural yoghurt.
INGREDIENTS
125g butter
1 cup sugar
3 eggs
2 tsp grated lemon zest (I just use zest of one lemon)
1 cup flour
1 tsp BP
½ cup sour cream
METHOD
Cream butter and sugar, add eggs and lemon zest and beat together
Fold into flour, BP and sour cream
Bake at 160 deg C for 30-40 mins (until you touch it and it springs back)
Leave in tin
Glaze:
¼ cup sugar
Juice of 1 lemon
Heat together until sugar dissolves
Pour glaze over cake while still in tin.
Enjoy!
